There are only a handful of well known cocktails that call for pimento dram. Originating in the Carribean where pimento trees grow, it’s most commonly used in a tiki context or in the classic Lion’s Tail, where tart lime juice provides a bold contrast to the seriously intense allspice flavor.

Pimento dram is a unique and delicious booze, but also a drastic one. It’s often measured by the spoon rather than jigger. A few drops too many can overpower all the other flavors in your cocktail, so go easy.

I’ve used a solid pour of it in The Orb only because the cream works so well as a neutralising force. This drink is blissfully smooth with a dry, clove-y counterbalance thanks to the dram and bitters. It’s not as sweet as you would expect, but it definitely counts as a treat. Reminded me of fluffy white clouds, hence the name.

  2. Double strain over an ice sphere
  3. Top with shaved nutmeg
